Andhra Mutton Curry

Instructions:

  1. In a large bowl, marinate the mutton pieces with ginger-garlic paste, turmeric powder, red chili powder, coriander powder, and salt. Mix well and let it rest for at least 30 minutes.
  2. Heat oil in a pressure cooker and add the finely chopped onions. Fry until they turn golden brown.
  3. Add the slit green chilies and fry for another 1-2 minutes.
  4. Add the finely chopped tomatoes and cook until they turn soft and mushy.
  5. Add the marinated mutton to the pressure cooker and mix well with the tomato-onion mixture. Cook for 5-7 minutes or until the meat changes color.
  6. Add 1 cup of water to the pressure cooker and mix well.
  7. Close the pressure cooker lid and cook for 5-6 whistles or until the mutton is cooked through.
  8. Once the pressure releases, open the lid and garnish with curry leaves and coriander leaves.
  9. Serve hot with rice or roti.
